Spicy Chickpea & Avocado Wraps

Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 avocado, mashed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1/2 red onion, diced
  • 1 small tomato, diced
  • 1 handful fresh spinach leaves
  • 2 gluten-free wraps or tortillas
  • Salt & pepper to taste
  • Optional: 1 tablespoon tahini or yogurt for dressing

Method

  • Heat olive oil in a skillet over medium heat. Add chickpeas, paprika, cumin, chili powder, salt, and pepper. Cook for 3-5 minutes until chickpeas are golden and slightly crispy.
  • In a bowl, mash the avocado with a pinch of salt and pepper.
  • Assemble the wraps by spreading mashed avocado on each wrap. Top with cooked chickpeas, diced onion, tomato, and fresh spinach.
  • Optional: Drizzle tahini or yogurt for extra flavour.
  • Fold the wrap tightly, slice in half, and serve.
